Putting a contemporary spin on time-honored traditions, Chef Freddie has devised dishes that reflect American Indian food traditions from four specific regions: the Southern Plains, Northwest, Great Lakes and Colorado Plateau/Southern Plains region. Specialties like Apple Bacon Wrapped Bison Medallions with Three Pepper Sauce and Blue Corn will share the table with Chef Freddie's own take on traditional American Thanksgiving fare with dishes such as Cedar Berry and Herb Crusted Oven Roasted Turkey with Three Berry Sauce.
